Buckwheat Waffles Recipe | Gluten Free Waffles
Learn how to make breakfast waffles with buckwheat flour.
Ingredients:
1 Cup Buckwheat Flour (120g)
½ Cup Unsweetened Cocoa Powder (50g)
¾ Teaspoon Baking Soda (3.75g)
¼ Teaspoon Salt (1.5g)
1-¼ Cups Buttermilk (300ml)
2 Egg Yolks
1 Teaspoon Vanilla (5ml)
1 Tablespoon Canola Oil (15ml)
¼ Cup Water (60ml)
3 Egg Whites
3 Tablespoons Sugar (35g)
Directions:
In a large mixing bowl, whisk together the flour, cocoa, baking soda, and salt. Set aside. In a bowl, whisk together the buttermilk, egg yolks, vanilla, oil, and water until well combined. Add the egg mixture to the dry ingredients, mixing just until combined.
In a separate bowl, beat the egg whites on high, adding the sugar one tablespoon at a time, until stiff peaks form and egg whites are glossy. Gently fold in egg whites in two parts into the batter just until well combined.
Prepare a waffle iron with cooking spray or butter. Spoon the batter into each plate making sure to spread the batter to the edges. Cook for about 4 minutes or until the waffles are lightly browned and cooked through.
