How to make cookies with any extra ingredients you might have in your pantry.

Ingredients:

  • 1 Cup All Purpose Flour (136g)
  • ½ Teaspoon Baking Powder (2.5g)
  • ½ Teaspoon Baking Soda (1.5g)
  • ¼ Teaspoon Salt (1.5g)
  • ¼ Cup Butter, Softened (56g)
  • ¼ Cup Vegetable Shortening (48g)
  • ¼ Cup White Sugar (48g)
  • ¼ Cup Brown Sugar (48g)
  • 1 Egg
  • 2 Teaspoons Vanilla (10ml)
  • 1 Tablespoon Milk or Milk Substitute (15ml)
  • ½ Cup Rolled Oats (40g)
  • ½ Cup Chocolate Chips (40g)
  • ½ Cup Chopped Nuts (30g)
  • ¼ Cup Seeds (30g)
  • ¼ Cup Small or Chopped Dried Fruit (40g)

Directions:

  1. In a small bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside. In a mixing bowl, beat the butter, shortening and two sugars until light and fluffy. Beat in egg. Stir in vanilla and milk. Stir in the flour mixture just until combined. Fold in the oats, chocolate chips, nuts, seeds, and dried fruit. Drop rounded tablespoonfuls of dough onto a parchment lined baking sheet, leaving about 2 inches of space between each.
  2. Bake in a preheated oven at 375F for 11-12 minutes or until golden brown, rotating pans halfway through baking. Cool completely on wire racks.
