Morning Glory Muffins Recipe

Ingredients:
2 Cups Whole Wheat or All Purpose Flour (304g)
¾ Cup Sugar (144g)
2 Teaspoons Baking Soda (6g)
1 Tablespoon Cinnamon (9g)
¼ Teaspoon Salt (1.5g)
3 Eggs
2 Teaspoons Vanilla Extract (10ml)
½ Cup Vegetable Oil (120ml)
½ Cup Unsweetened Applesauce (122g)
2 Cups Grated Carrot (About 2 Large Carrots)
1 Large Grated Apple
1 Cup Crushed Pineapple, Drained (112.5g)
1 Cup Chopped Walnuts or Pecans (112g)
Directions:
In a medium bowl, whisk together the flour, sugar, baking soda, salt, and cinnamon until well combined. Set aside. In a large mixing bowl, whisk together the eggs, vanilla, oil, and applesauce until combined. Stir in the grated carrot, apple, and pineapple. Add flour mixture and stir just until combined. Gently fold in the pecans or walnuts.
Line a muffin tin with paper liners. Spoon batter into each cup, filling it completely. Bake in a preheated oven at 350F for 25-30 minutes or until an inserted toothpick comes out clean. Let muffins cool completely.
