How to make super soft and delicious apple fantans.

Ingredients:

  • 1 Envelope Active Dry Yeast (¼ oz.)
  • 2 Teaspoons Sugar (8g)
  • 1 Cup Warm Water (105F-115F)
  • 1 Egg
  • ¼ Cup Sugar (48g)
  • ¼ Cup Melted Butter (60ml)
  • 1-½ Cups Bread Flour (210g)
  • 1-½ Cups All Purpose Flour (210g)

Filling:

  • 2 Tablespoons Butter (28g)
  • 3 Cups Diced Apples (About 3 Large Apples)
  • ¼ Cup Brown Sugar (48g)
  • 8 Tablespoons Softened Butter (112g)
  • ¾ Cup Sugar (144g)
  • 1 Tablespoon Cinnamon (6g)
  • ¼ Teaspoon Nutmeg (0.5g)
  • ¾ Cup Chopped Pecans  (84g)

Directions:

  1. In a mixing bowl, combine the yeast, 2 teaspoons sugar, and warm water. Let stand 5 minutes to proof. Whisk in the egg, sugar, and melted butter. Add the bread flour and beat with an electric mixer, just until smooth. Gradually beat in the all purpose flour. If needed, add more bread flour, a little at a time to make a soft dough. Turn the dough out onto a floured work surface and knead until the dough is smooth and elastic, about 6-8 minutes.
  2. Lightly grease a large bowl with cooking spray. Place the dough in bowl, turning it over once to coat the top. Cover with plastic wrap and let rise in a warm place for 45-60 minutes or until doubled in bulk.
  3. Meanwhile to prepare the filling, melt 2 tablespoons of butter in a saucepan over medium-high heat. add the apples and brown sugar. Cook, stirring occasionally, until apples are tender, about 4-5 minutes. Remove from heat and cool completely.
  4. Punch dough down and turn out onto a floured work surface. Roll out to form a 20 by 12 inch rectangle. Spread 8 tablespoons softened butter evenly over the surface of the dough. Whisk together ¾ cup sugar, 1 tablespoon cinnamon, and ¼ teaspoon nutmeg. Sprinkle the mixture over the butter. Top with the apples and pecans.
  5. Cut dough into 5 strips (12 by 4 inch). Stack the dough strips on top of each other. Tuck back in any filling that fell out. Cut the stack in half lengthwise. Then each half into 6, making 12 (2 inch) squares. Grease a muffin tin with cooking spray. Place the squares into each muffin cup with the cut sides up. Bake in a preheated oven at 375F for 18-20 minutes or until golden brown. Cool in pan 5 minutes, then remove to a wire rack and cool completely.
