Ingredients:
- 1/3 Cup Honey (80ml)
- ½ Cup Chunky Peanut Butter (128g)
- ½ Teaspoon Cinnamon Powder (1.5g)
- ¼ Teaspoon Salt (1.5g)
- 1-½ Cups Uncooked Quick-Cooking Oats (135g)
- ½ Cup Dried Fruit (60g)
Directions:
- In a small saucepan, over medium heat, combine the honey, peanut
butter, cinnamon, and salt. Cook, stirring constantly, only until the
peanut butter melts (liquefies). Remove from heat. Let cool 2-3 minutes.
Meanwhile, in a bowl, combine the oats and dried fruit. Add the peanut
butter mixture and stir together until well combined. Cool about 3
minutes. Using a tablespoon measure and your hands, shape the mixture
into 1-2 inch balls. Place balls on a parchment lined baking sheet and
chill in the refrigerator for about 20 minutes. Store in an air tight
container in the refrigerator for up to a week.
