Spicy Southwest Breakfast Bowl Recipe
How to make a filling breakfast bowl loaded with vegetables, grains, and protein.
Ingredients:
- 2 Tablespoons Olive Oil
- ½ Chopped Yellow Onion
- 1 Celery Stick, Chopped
- ½ Yellow Bell Pepper, Chopped
- ½ Orange Bell Pepper, Chopped
- 1 Jalapeño, Chopped Small
- 1 Roma Tomato, Chopped
- ½ Teaspoon Oregano
- ½ Teaspoon Thyme
- 1 Teaspoon Parsley Flakes
- Salt & Pepper to Taste
- Dash of Cayenne Pepper
- 1 Cup Cooked Brown Rice
- 1 Cup Cooked Black Beans
- 2 Eggs (optional)
Directions:
- In a large frying pan, heat the oil over medium-high heat. Add the
onion and cook, stirring occasionally, until almost translucent, about 4
minutes. Add the celery, bell peppers, and jalapeño; cook until tender.
Add the tomato, oregano, thyme, parsley, salt, pepper, and cayenne.
Stir to combine. Add the brown rice and black beans; cook only until
heated through.
- Serve warm. Optional: Add 2 cooked eggs on top.
