Spicy Southwest Breakfast Bowl Recipe 

How to make a filling breakfast bowl loaded with vegetables, grains, and protein.

Ingredients:

  • 2 Tablespoons Olive Oil
  • ½ Chopped Yellow Onion
  • 1 Celery Stick, Chopped
  • ½ Yellow Bell Pepper, Chopped
  • ½ Orange Bell Pepper, Chopped
  • 1 Jalapeño, Chopped Small
  • 1 Roma Tomato, Chopped
  • ½ Teaspoon Oregano
  • ½ Teaspoon Thyme
  • 1 Teaspoon Parsley Flakes
  • Salt & Pepper to Taste
  • Dash of Cayenne Pepper
  • 1 Cup Cooked Brown Rice
  • 1 Cup Cooked Black Beans
  • 2 Eggs (optional)

Directions:

  1. In a large frying pan, heat the oil over medium-high heat. Add the onion and cook, stirring occasionally, until almost translucent, about 4 minutes. Add the celery, bell peppers, and jalapeño; cook until tender. Add the tomato, oregano, thyme, parsley, salt, pepper, and cayenne. Stir to combine. Add the brown rice and black beans; cook only until heated through.
  2. Serve warm. Optional: Add 2 cooked eggs on top.
