Easy Whoopie Pie Recipe
Ingredients:
½ Cup Butter, Softened (112g)
¾ Cup Sugar (144g)
1 Egg
1 Yolk
1 ¾ Cup Flour (210g)
½ Cup Unsweetened Cocoa (40g)
1 Teaspoon Baking Soda (5g)
¼ Teaspoon Salt (1.5g)
1 ½ Cups Buttermilk (360ml)
Filling:
8 oz. Cream Cheese, Softened (226g)
¼ Cup Butter, Softened (56g)
3 Cups Powdered Sugar (360g)
Chopped Pecans
Directions:
In a mixing bowl, cream the butter and sugar until light and fluffy. Add egg and egg yolk, beat just until combined. In a separate bowl, sift together the flour, cocoa, baking soda, and salt. Gradually add to butter mixture alternating with buttermilk, beginning and ending with flour mixture. Beat just until blended after each addition.
Scoop the batter using a tablespoon measure and drop onto a parchment lined baking sheet. Bake in a preheated oven at 350F for 10 minutes. Remove cookies to a wire rack and cool completely.
For the filling, beat the cream cheese, butter, and powdered sugar until smooth. Add the powdered sugar ½ cup at a time.
Turn half of the cookies over and spread or spoon the filling (about 1-2 tablespoons) onto the flat side of each cookie. Sprinkle with pecans, then top with another cookie. Press gently to spread the filling to the edges.
