Oregon Trail Mix Cookies Recipe
Ingredients:
1 ¼ cup Whole Wheat Flour (190g)
¾ Cup Rolled Oats (60g)
1 Teaspoon Cinnamon (3g)
½ Teaspoon Baking Powder (2.5g)
½ Teaspoon Baking Soda (1.5g)
¼ Teaspoon Salt (1.5g)
2 Tablespoons Ground Flaxseeds (13g)
¼ Cup Softened Butter (56g)
½ Cup Light Brown Sugar (96g)
¼ Cup Creamy Peanut Butter (64g)
2 Tablespoons Honey or Maple Syrup (30ml)
1 Teaspoon Vanilla (5ml)
1 Egg
1/3 Cup Pumpkin Seeds (37.3g)
½ Cup Dried Cranberries (60g)
½ Cup Almonds (71.5g)
Directions:
In a bowl, whisk together the flour, oats, cinnamon, baking powder, baking soda, salt, and flaxseeds. Set aside. In a large mixing bowl, stir together the butter, sugar, peanut butter, honey, and vanilla until well combined. Add the egg and mix until combined. Add the flour mixture to the butter mixture and stir just until combined. Fold in the pumpkin seeds, cranberries, and almonds.
Spoon 2 tablespoons of dough and roll into a ball, place on a parchment lined baking sheet, and gently flatten cookie. Repeat with the rest of the dough. Bake in a preheated oven at 350F for 10 minutes or until golden brown. Let cookies cool in pan 5 minutes then remove to a wire rack to cool completely.
