Baked Sweet Potato Chips Recipe
Ingredients:
1 Large Sweet Potato
1 Teaspoon Salt (6g)
1 Teaspoon Black Pepper (2.3g)
Directions:
Clean and peel the sweet potato. Using a mandolin, cut the sweet potato into thin, round slices, about 1/16 in. thick. Place slices in one layer (don’t overlap) on lined baking sheets. Lightly sprinkle with salt and pepper. Bake at 375°F for 20 minutes flipping each chip over halfway through baking.
Let chips cool completely. Bake each batch again an additional 6-8 minutes at 325°F for more crispiness.
*After several test batches of chips, I found that the thinner the chip, the faster they brown. So, in the last 6-8 minutes of baking, keep a close eye on them, making sure they don’t burn. 😉
It took me several batches of burnt chips for me to get the perfect crispiness, but they finally came out great! As it turns out, letting them cool completely before baking them a second time, actually helped make them crunchier and kept them from burning completely.
