Sweet Potato Pancakes Recipe
Ingredients:
1 ¼ Cup of Smashed Sweet Potato (125g)
1 Egg
3 Tablespoons of Melted Butter (45ml)
1 ½ Cups of Flour (210g)
2 ½ Teaspoons of Baking Powder (12.5g)
1 Teaspoon of Baking Soda (5g)
1 Teaspoon of Salt (6g)
1 Teaspoon of Cinnamon Powder (2.8g)
¾ Cup of Milk (180ml)
Directions:
In a mixing bowl, whisk together the sweet potato with the egg. Add in the melted butter and stir. Blend in the flour, baking powder, baking soda, salt, and cinnamon. Drizzle in the milk a bit at a time and keep whisking until everything is well incorporated.
Spray a pan or griddle with cooking spray or butter it. Use medium to low heat for this recipe. Using an ice cream scoop, scoop the pancake batter onto your pan or griddle. (If the batter is too solid, use a spoon to spread it out into a circle.) Cook each side of the pancake for about 2 minutes until golden brown. Transfer to a plate and spread a bit of butter on each pancake. Enjoy!
