How to make an easy breakfast of vegetables and eggs. 

Ingredients:

  • 2 Tablespoons Olive Oil (30ml)
  • 2 Celery Stalks, Chopped
  • 1 Jalapeño, Chopped
  • ½ Yellow Onion, Chopped
  • 1 Bell Pepper, Chopped
  • 2 Roma Tomatoes, Chopped
  • 2 Teaspoons Minced Garlic (10g)
  • 1 14.5oz. Can Diced Tomatoes (411g)
  • 1 Teaspoon Parsley Flakes (0.54g)
  • 1 Teaspoon Oregano (1g)
  • 1 Teaspoon Cumin (2g)
  • Salt To Taste
  • 1 15oz. Can Black Beans, Drained (425g)
  • 5-6 Eggs Grated Cheese

Directions:

  1. In a large pan, heat the oil over medium-high heat. Add the celery, jalapeño, onion, bell pepper, tomatoes, and garlic. Saute until vegetables are tender. Stir in the diced tomatoes, parsley, oregano, cumin, salt, and beans. Cook only until heated through. Remove from heat.
  2. Spray a 9 by 15 inch baking dish with cooking spray. Spoon the mixture into the dish. With a spoon, make indentations in the mixture. Add the eggs to each indentation. Bake in a preheated oven at 375F fro 10-15 minutes or until the eggs are cooked. Top with grated cheese. Serve warm.

| Makes about 3-4 servings.

Note: I was using a smaller baking pan (9x13.5), so I could fit only 5 eggs. But if you use a larger one, you could be able to fit 6, maybe 8 eggs.
