Fried Rice Cakes Recipe

Ingredients:

  • 2 ½ Cups Brown Rice, Cooked & Cooled

  • 2 Eggs

  • 1 Tablespoon Soy Sauce

  • ½ Teaspoon Ginger Paste

  • 1 Tablespoon Dried Parsley Flakes

  • ½ Cup Green Onions, Sliced

  • 1 Garlic Clove, Chopped

  • 1-3 Tablespoons Vegetable Oil

Directions:

  1. Cook 1 cup of rice according to package instructions without using any butter. The final amount of rice should be about 2 ½ cups. Let cool completely.

  2. In a large bowl, whisk the eggs. Add the soy sauce and ginger and mix together. Add the parsley, green onions, and garlic and stir until combined. Add in the rice to this mixture and mix until the rice is fully coated. 

  3. In a large skillet, heat 1 tablespoon of vegetable oil. Spoon the rice mixture onto the pan and form into circular cakes about 3-4 inches in diameter. Cook for 3 minutes on each side or until golden brown. (Add more oil one tablespoon at a time if necessary.) Repeat the process with the rest of the rice mixture.  

| Makes about 10 cakes.
