Soft & Fluffy Orange Poppy Seed Muffins
Ingredients:
3 Cups All Purpose Flour (360g)
3 ½ Teaspoons Baking Powder (17.5g)
¼ Teaspoon Salt (1.5g)
1 Cup Sugar (192g)
¾ Cup Butter, Softened (140g)
2 Egg Yolks
1 ¼ Cups Milk Or Milk Substitute (300ml)
1 Tablespoon Orange Zest (6g)
2 Teaspoons Vanilla (10ml)
½ Cup Orange Juice (120ml)
2 Egg Whites
4 Teaspoons Poppy Seeds (11.2g)
Directions:
In one bowl, whisk together the flour, baking powder, and salt; set aside. In another bowl, whisk together, the milk, zest, vanilla, and juice; set aside. In a large mixing bowl, cream the butter and sugar until light and fluffy. Add the egg yolks one at a time, mixing just until combined. Add the flour mixture alternating with the milk mixture, mixing just until well combined. Beat egg whites until stiff peaks form. Gently fold the egg whites into the batter. Stir in the poppy seeds.
Line a muffin tin with paper liners. Spoon the batter into each cup filling them about three fourths full with batter. Bake in a preheated oven at 350F for about 18-20 minutes or until an inserted toothpick comes out clean. Place on a wire rack to cool completely.
