Easy Berry Trifles Recipe
Ever since I first saw that episode of Friends where Rachel makes an English Trifle with an interesting choice of ingredients, I’ve been very curious as to how trifles actually taste. They always look absolutely beautiful in pictures which is probably why I had the idea that they may be hard to make. However, I was able to find a recipe that reduces the time by using more ready made ingredients. Also, I decided to make smaller individual trifles so that every person can enjoy their own helping of dessert.
English Trifles
Traditionally, English Trifles are made with fruit, custard, and a layer of sponge cake that is sometimes soaked in alcohol, most commonly, sherry. The fruit and cake layers can also be covered in flavored gelatin. To achieve the beautiful layers of the trifle, the gelatin layer is covered in custard, then the process is repeated a couple of times, after which the trifle is topped with whipped cream. Of course, the recipe can vary greatly from family to family. Everyone adapts the recipe according to their tastes, so even where you are from can make a difference on how you make trifles. Nowadays, there’s more room for experimenting, so you’ll often find recipes online for S’mores Trifles or even Pumpkin Spice Trifles.~
Ingredients:
1 Package Sugar Free Berry Flavored Gelatin (0.3oz/8.5g)
½ Cup Blueberries
1-2 Cups Strawberries, Sliced
1 Tablespoon Sugar
2 Cups Angel Food Cake, Cubed
1 Package Vanilla Pudding Mix (3.4oz/96g)
Whipped Cream
Almonds, Chopped (Optional)
| Makes 7 one cup servings.
Directions:
In a bowl make the gelatin according to package instructions. Refrigerate for 45-60 minutes or until slightly thickened. In another bowl combine the strawberries, blueberries, sugar and stir until the berries are well coated. Set aside. Cut angel food cake into small cubes, set aside.
Using 1 cup glasses, place a layer of the cake at the bottom of each. Followed by a layer of berries. Pour the gelatin over each with enough to just cover the berries and cake. Refrigerate trifles for 20-30 minutes.
Prepare the pudding according to package instructions. Spoon pudding onto each trifle. Then top with a final layer of whipped cream. Finish by sprinkling chopped almonds on top (optional).
Chill before serving.
