  • Carrots, 1 Lb. (454g)
  • 1/4 Cup Olive Oil (60ml)
  • 1 Tablespoon Parsley Flakes (1.6g)
  • 1 Teaspoon Thyme (1.43g)
  • Black Pepper, to taste
  • Kosher Salt, to taste
  1. Wash and cut carrots in half lengthwise. Place carrots in a large bowl. Add olive oil, parsley, thyme, salt and pepper. Toss together until carrots are evenly coated.
  2. Transfer carrots to a parchment lined baking sheet and arrange them in one layer. Bake in a preheated oven at 400°F for 30 to 40 minutes or until carrots are tender. Serve warm.

    I usually make roasted sweet potatoes just like you make your carrots, but I never even imagined trying wth something else! For sure gonna try! 😀
