Bringing an easy yet flavorful dish like roasted carrots to the table can be just the addition you are looking for. The carrots’ own natural sweetness that emerges once cooked combined with the flavors of parsley and thyme go perfectly well with any family dinner.

 

Ingredients:
  • Carrots, 1 Lb. (454g)
  • 1/4 Cup Olive Oil (60ml)
  • 1 Tablespoon Parsley Flakes (1.6g)
  • 1 Teaspoon Thyme (1.43g)
  • Black Pepper, to taste
  • Kosher Salt, to taste
Directions:
  1. Wash and cut carrots in half lengthwise. Place carrots in a large bowl. Add olive oil, parsley, thyme, salt and pepper. Toss together until carrots are evenly coated.
  2. Transfer carrots to a parchment lined baking sheet and arrange them in one layer. Bake in a preheated oven at 400°F for 30 to 40 minutes or until carrots are tender. Serve warm.

    I usually make roasted sweet potatoes just like you make your carrots, but I never even imagined trying wth something else! For sure gonna try! 😀
