Pecan Cookies are a great addition to any recipe box. Their subtle sweetness and the warmth of the cinnamon is perfect for having with a cup of coffee.


  • 1 Cup Pecans, Finely Ground (100g)
  • 1 Cup All Purpose Flour (140g)
  • 1/3 Cup Sugar (63g)
  • 1/2 Cup Butter, Cubed & Cold (100g)

Cinnamon Sugar:

  • 1/3 Cup Sugar (63g)
  • 1 Teaspoon Cinnamon Powder (2.6g)
  1. In a large bowl, whisk together the pecans, flour, and sugar. Cut in the butter until the mixture is crumbly. Then start to gently knead until a smooth dough is formed.
  2. On a lightly floured surface, roll out the dough to about 1/4 inch thickness. Cut dough using a 2.5 – 3 inch cookie cutter. Transfer cookies to a lined baking sheet, leaving 1 inch of space between each cookie. Bake at 325°F for 10 – 12 minutes or until edges begin to brown.
  3. Let cookies cool on the baking sheets for 5 minutes. Meanwhile in a small bowl, mix together the remaining sugar and cinnamon powder. Completely cover each warm cookie with cinnamon sugar and transfer to wire racks to finish cooling completely.

    1. I believe you can use this recipe with a toaster oven. Just make sure the temperature in the oven is running smoothly. Mine, for example, tends to heat unevenly so I have to keep an eye on it.
