As requested, today I am sharing this easy and simple vanilla cake recipe. It is pretty quick to make and doesn’t need any more ingredients other than those you already have in your baking shelf.
- 3 Cups Cake Flour
- 2 Teaspoon Baking Powder
- 1 Teaspoon Baking Soda
- 1/4 Teaspoon Salt
- 4 Eggs, Room Temperature
- 3/4 Cup Sugar
- 3 Teaspoons Vanilla Extract
- 3/4 Cup Vegetable Oil
- 1 1/2 Cups Water
| Makes one 8 inch round cake (2 layers).
- In one bowl, sift together the flour, baking soda, baking powder, and salt. Set aside. In another bowl beat together the eggs sugar and vanilla extract, at medium speed until pale and thickened.
- Gradually add the dry ingredients to the mixture, alternating with the oil and water. Mix just until blended. Transfer batter to two prepared 8 inch round cake pans. Bake in a preheated oven at 350°F for 35-45 minutes, or until and inserted toothpick comes out clean.
- Let cakes cool in pans for 10 minutes then transfer to wire racks. Let cool completely, then cover with the frosting of choice.
Tips: When I made this recipe using large eggs, it tasted a bit too much of egg. So, to avoid this, use 3 instead of 4 if you are also using large ones.
If you don’t have two 8 inch pans, you can also use one 10 inch round cake pan. Simply increase the baking time to 60-70 minutes.
