  • 1 Cup All Purpose Flour
  • 1/8 Teaspoon Salt
  • 1/2 Teaspoon Baking Soda
  • 1/2 Teaspoon Cinnamon Powder
  • 1/4 Cup Butter, Softened
  • 1/3 Cup Packed Brown Sugar
  • 2 Ripe Bananas, Mashed
  • 1 Egg
  • 1/2 Teaspoon Vanilla Extract


  • 1/4 Cup Butter, Softened
  • 1/2 Cup Packed Brown Sugar
  • 1/2 Cup All Purpose Flour
  1. In a bowl, whisk together the flour, salt, baking soda, and cinnamon. Set aside. In another bowl, cream together the brown sugar and butter. Add the mashed bananas, egg, and vanilla and beat until well combined.
  2. Fold the dry ingredients into the creamed mixture just until combined. Spoon the batter evenly into a muffin tin lined with paper cups, filling each about 3/4 full.
  3. Mix together the streusel ingredients well. Spoon the streusel on top of each muffin.
  4. Bake at 350°F for 18-25 minutes or until golden. Let stand 10 minutes, then remove from muffin tin and cool completely.
