During the Autumn and Winter months I absolutely love making oatmeal in the mornings! It just seems to me like the perfect warm, cozy start to any day. What I love about this simple and classic dish is that it can be completely customizable. Different fruits or nuts will give you different flavors. You can experiment with different sweeteners, extracts, or if you really want to indulge, even add chocolate if you wish!

The three easy recipes I’m sharing with you here are the perfect way to evoke the flavors of Fall. We will be making overnight oats with the sweet tastes of apple, pumpkin, and sweet potato! In addition, we will use the warm, earthy flavors of cinnamon, pecan, and almonds to accompany our oats.

Overnight Oats Ingredients

Apple Pecan Overnight Oats Recipe
Apple:
  • 1/2 Cup Almond Milk
  • 2 Tablespoons Grated Green Apple
  • Cinnamon Powder ( to taste)
  • 1/2 Cup Old Fashioned Oats
    Topping:
  • 1/2 Green Apple, Chopped
  • Chopped Pecans
Pumpkin Overnight Oats Recipe
Pumpkin:
  • 1/2 Cup Almond Milk
  • 2 Tablespoons Pumpkin Puree
  • 1 Tablespoon Honey
  • 1/2 Cup Overnight Oats
    Topping:
  • Dried Cranberries
  • Chopped Almonds
Sweet Potato Overnight Oats Recipe
Sweet Potato:
  • 1/2 Cup Almond Milk
  • 2 Tablespoon Sweet Potato Puree
  • Cinnamon Powder (to taste)
  • 1/2 Cup Old Fashioned Oats
    Topping:
  • Sweet Potato Chunks
  • Almonds

* Toppings in the video are optional. You can top the oats with any dried fruit or nuts and seeds you prefer.
